Vegan vegetable curry

As much as I love food and making it I get stuck in my “go to’s”. Like lasagna, porkchops, tacos 🌮 😍, salmon, pasta dishes etc and I eat alot of meat so I thought I would try something new and jam in the veggies!!!! And let me tell you it came out GREAT. I just litterally threw in what ever veggies I had and added coconut milk, red curry paste and salt. And I finished with some fresh lime. Super simple and oh so yummy. Definitely worth a try. And OBVIOUSLY you can add chicken or shrimp to this if you LOVE your meats but I do think we all can use some extra veggies in our lives. 😘

I used

  • 1 red bell pepper
  • 1/4 head of a cauliflower
  • 1 yellow onion
  • 3 cloves of garlic
  • Fresh grated ginger, (to taste)
  • Snowpeas
  • 1/2 green zucchini
  • 1/2 yellow zucchini
  • Mushrooms
  • 2 carrots
  • 2 cans of full fat coconut milk
  • Red curry paste, to taste
  • S&P
  • Lime
