Red, white & blue Cupcakes

I’m swedish ans I dont really care much about the 4th of July BUT I live here so I gota do a lil something. So me and P made these mini vanilla muffins with a red,white and blue vanilla frosting. SOOOOOO tasty and this frosting is my go to! You can NOT go wrong. Its delicious. Gona be honest, it was messy AF to put the three different colors in the piping bag but it came out pretty good over all. I def ate 4 of them back to back šŸ˜‚. Lucky enough there 40 of them so no one will know šŸ˜.

Vanilla muffin

  • 1 1/3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs , room temperature
  • 1 tsp pure vanilla extract
  • 1/2 cup whole milk
  1. Preheat oven to 350F. Prepare 1-2 baking sheets with mini cupcake holders. About 40 small and 12 big (if you prefer that).
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a standing mixer fitted with the whisk or paddle attachment, beat together butter and sugar on medium speed until light and fluffy, about 3 minutes. Scrape down the sides and bottom of the bowl as necessary.
  4. On medium speed, beat in eggs, one at a time, beating well after each addition.
  5. Add vanilla extract and beat until combined.
  6. With the mixer on low speed, add half of the dry ingredients and beat just until combined. Add milk and beat until combined. Add the other half of the dry ingredients and beat slowly or fold by hand only until combined. Do not over mix – the less you mix, the lighter the cake will be.
  7. Divide batter into cupcake molds filling 3/4 of the way. And bake 8-10 minutes for mini and about 15-20 min for big cupcakes. Until a toothpick inserted in the center comes out clean. Do NOT over bake, they will get dry!
  8. Allow to cool completely before frosting!

Vanilla frosting

  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 8oz block cream cheese, room temperature
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • 4 cups powdered sugar
  • Red and blue food coloring (optional)
  • Sprinkles (optional)
  1. Combine butter, cream cheese and vanilla in a bowl of a stand mixer with the whisk attached and beat until light and fluffy, about 2 min.
  2. Add salt and powdered sugar. Adding one cup at a time and combine well between addtions.
  3. After last addition beat on medium to high for 2 min. Until super light and fluffy.
  4. Divide frosting into 3 bowls. Add red food coloring to one bowl and blue in another. Add as much as u desire for the right amount of color you prefer.
  5. In a piping bag with a star attachment or a desired one. Add whote frosting on one side of the bag. Red on another and blue on the last side. Start piping. Add sprinkles if you like. DONE!!!!
