Alright yall I SWEAR i wont bake with apples in a while. This is my LAST apple recipe for a minute LOL but I had all these apples so what was I supposed to do!?
I was literally dying for a cupcake and I stared at these damn apples and was like βi will be damned if I let you rotβ so I was just like, Ima turn those suckers into cupcakes so I did. π π§ They came out SUPER moist and delicious and taste like an elevated applepie. And as USUAL I let my partner in crime be my taste tester and she licked of the frosting and was done π€¦πΌββοΈ. I dont blame her I ALWAYS use this frosting recipe you can never go wrong its delicious, not heavy nice and airy. I just add different flavors to it, in this cake cinnamon! YOU ARE WELCOME π
Ingredients
APPLE FILLING
- 3 tbsp granulated sugar
- 3 medium apples, cored, peeled and diced small
- 1 tbsp fresh lemon juice
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger (optional)
- 1/4 tsp salt
- 2 tbsp unsalted butter
- 2 tsp all-purpose flour
CUPCAKE
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 2 eggs
- 3/4 cup unsalted butter, room temperature
- 2 tsp vanilla extract
- 1/2 cup whole milk
FROSTING
- 1 stick unsalted butter, room temperature
- 8 oz cream cheese, room temperature (brick style)
- 1 tsp vanilla extract
- 1-2 tsp cinnamon
- 1/4 tsp salt
- 4 cups powdered sugar
APPLE FILLING
- Mix the diced apples, granulated sugar, lemon juice, cinnamon, salt and butter together in a pan.
- Let cook over medium heat, while stirring frequently until apple are tender. About 8-10 min.
- Once tender add the flour, and stir until the liquid thickens. 1-2 min.
- Remove from heat and let the filling cool completely.
CUPCAKES
- Preheat oven to 350Β°F.
- Line a 12-cup muffin tin with paper liners.
- Whisk together the flour, baking powder, cinnamon, nutmeg and salt in a medium bowl.
- In another bowl beat the sugar and butter together until light and creamy. 2-3 min. Then add one egg at the time, make sure you corporate the eggs very well in between. Dont worry if it looks a little grainy, IT WILL COME TOGETHER!
- Add vanilla. Next add half your flour mixture, then your milk, then remaining flour making sure to beat well after each addition.
- Divide the batter evenly among the cups of the prepared muffin tin. Top each muffin with a mound of apple filling.
- Bake for about 20-25 minutes or until an inserted toothpick (around the edge) comes out clean.
- Let the cupcakes cool in the tin for a few minutes, then transfer to a rack to cool completely.
FROSTING
- Beat the butter and cream cheese together until light and fluffy.
- Add vanilla, cinnamon and salt and mix well.
- Add your powdered sugar one cup at the time, beat well inbetween each addition.
- After all sugar is incorporated beat 1-2 min more to make sure its SUPER light and fluffy.
- Add frosting to a piping bag with the desired cake tip (i used star pattern) and pipe onto you cool muffins. EAT!!!!!
