Biskvier

This is by far my FAVORITE swedish pastry. I could eat this all day everyday!!!!!!! When we go out for fika this is my first choice. You can never go wrong. Its a almond cookie on the bottom. A super smooth butter cream filling and dipped in dark chocolate. All the yumminess in one cookie. Its gluten free and can be made with different fillings. I made mine with a nutella butter cream filling 😍. And ofcourse I had to let P try and she approved 😍

Ingredients

Cookie

  • 1 1/4 cup almond flour
  • 3/4 cups granulated sugar
  • 2 egg whites
  • 1 tsp vanilla extract

Butter cream

  • 1 stick unsalted butter
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 1 cup Nutella
  • 200g melted dark chocolate (for dipping)
  1. Turn oven on to 350 F and line a pan with parchment paper.
  2. Mix all the ingredients for the cookie together. Once incorporated but in a piping bag and pipe out about 15 thin cookies on your prepared parchment paper. Leaving 1 inch apart. Bake in the middle of the oven for 10-12 min. Take out and let cool on the pan.
  3. In a stand mixer bowl with the wisk attached. Add all ingredients for the butter cream in the bowl and mix on low til all incorporated. Stop and acrape down the sides. Now mix on medium speed until lighter in color and fluffy butter cream. About 2 min.
  4. Once the cookies are cool take them of the paper and trun them over. Now with either a piping bag or a spoon, scoop on about 2 tbsp on each cookie. Adding a top in the middle. Its supposed to look like a mountain. I like alot of butter cream so add more if needed.
  5. Once all cookies are done, put them in the fridge and let cool.
  6. Now melt the chocolate either in microwave or over a waterbath.
  7. Take cookies out of fridge and dip them in the melted chocolate. Covering all the butter cream. Its a little messy but well worth it!
  8. Once all the cookies are covered in chocolate let them cool uncovered in the fridge for 5 min. Ready to eat!

    1. Oj förlåt för så sent svar!
      När jag gjort recept som behöver bittermandel har jag faktiskt hoppat över det för att de e svårt o få tag på där jag är. Och det har gårt lika bra ändå. Man får inte helt den unika smaken som bittermandel tillför men smaken är minst lika god ändå ☺️
