

Delicious, fluffy, light with a whipped vanilla butter creamcheese frosting. WHO in their right minds wont love this? 😊
Cupcakes
- 1 1/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed (light or dark works)
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp ground ginger
- 3/4 cup canola oil
- 2 eggs, room temperature
- 1 1/2 tsp vanilla extract
- 2 Tbs whole milk
- 1 1/2 cups grated carrots
- 1/2 cup chopped walnuts (optional, I didn’t use any)
- Preheat oven to 350F and line a 12 -count muffin tin with muffin liners. If you are making half mini muffins like I did you will have enough for 20 mini and about 7 normal size muffins. (Regular baking sheet works fine for your muffins)
- In a large bowl whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, nutmeg and ginger. (Stand mixer or electric handmixer works fine)
- Stir in canola oil. Then add eggs, one at the time, whisk til well combined.
- Stir in vanilla extract and milk.
- Add the carrots and nuts(if using), stir together.
- Evenly divide batter in to cupcake tins. Fill 3/4 of the way. Bake in oven for about 20 min or u til a toothpick inserted in the center of the cupcake comes out clean. If you are making the mini cupcakes bake for 12-15 min.
- Once done let cool complete before decorating with frosting.
Vanilla frosting
- 1 stick(1/2 cup) unsalted butter, room temperature
- 1 block (8oz) creamcheese, softened
- 1 tsp vanilla extract
- 4 cups powdered sugar
- 1/4 tsp salt
- Combine butter and creamcheese in the bowl of a stand mixer (or in a large bowl using an electric mixer). Beat until creamy and light.
- Add vanilla and salt, stir. Now is the time to Add in food coloring to your frosting if you like. Few drops of desired color and mix.
- Mix on low speed, slowly add in powdered sugar, little by little until all is well combined.
- Once combined put the frosting in a piping bag using an insert of your choice (I used start shaped) and pipe on to your now cool cupcakes. Starting on the outside working your way in to the center of the cupcake.
- All done! Decorate with sprinkles, chocolate or some chopped up walnuts if desired. Let your imagination go wild!
