Today I got to sleep in. Our daugther slept over at Nanas house and I def needed to catch up on some sleep. Unfortunately I woke up with a sore throat and a stuffy nose but I decided to still make something simple, and that can never really go wrong. This brownie is super rich and very strong chocolate flavor. A little more of a βgrown upβ brownie. How ever I did add some peanut butter cups chopped up cause WHO doesnt love peanutbutter cups π. You can add what ever you like. Chocolate, nuts, peanut butter, caramel candy, m&mβs let your imagination run free!!!!


Ingredients
- 1 cup unsalted butter, melted & cooled
- 2 tbs canola oil
- 1 cup white sugar
- 1 cup brown sugar (dark or light)
- 4 large eggs at room temperature
- 1 tbs pure vanilla extract
- 1/2 tsp salt
- 1 cup all purpose flour (i use unbleached)
- 1 cup good quality cocoa powder
- 3,5 oz chopped chocolate (dark or milk)
- 6-8 peanutbutter cups
- Add nuts or any other flavoring if desired
- Preheat oven to 350 F
- Grease a square pan and line with parchment paper
- Combine butter, oil and sugars in a bowl. Whisk until well combined.
- Add eggs one at the time and whisk well inbetween. Add vanilla and whisk for 2-3 minutes on medium-high with a handheld electric mixer or in your kitchen aid until ligther in color.
- Sift in flour, cocoa powder and salt and fold i. Carefully with a spatula. Do not over mix as this will change the consistency of your brownie.
- Fold in half of the chopped chocolate and half of the peanut butter cups or what ever you decide to put in your brownie.
- Pour batter into the prepared pan, disperse evenly. Now top of with the rest of the chocolate and peanut butter cups OR your desired mix in and push down a little bit in the batter.
- Bake for about 20-25 minutes or until cake is set but still gooey in the middle. For a more baked brownie leave in another 5 min.
- Take out let cool in pan. Serve with vanilla ice cream and/or whipped cream.
